Ingredients

  • 10 slices bacon
  • 1/2 cup Jack Daniel's
  • 1/2 cup brown sugar
  • 1 tsp cayenne pepper
  • 3 cups macaroni, uncooked
  • 3 Tbs unsalted butter
  • 1/3 cup whole wheat flour
  • 2 Tbs Jack Daniel's
  • 2 cups unsweetened almond milk
  • 3 cups cheese
  • 6 slices provolone cheese
  • 1 tsp paprika
  • Salt and pepper

Step 1

Preheat oven to 400 F. Line a baking sheet with parchment paper.
In a small pot, bring ½ cup Jack Daniel's to a boil. Lower heat to medium, and simmer until it reduces to 2 tablespoons. Remove from heat. On a plate, combine brown sugar and cayenne. Dip the bacon into the Jack Daniels and then coat both sides with the sugar mixture. Place on prepared baking sheet. Bake for 7 minutes, turn and bake for another 5 minutes. Remove the bacon to a plate, chop and set aside.
Bring water to a boil in a large pot. Add macaroni and cook until al dente. Drain pasta; set aside.

While pasta is cooking, melt butter in a medium pot. Add flour, and whisk to combine (roux). Add 1 Tbs Jack Daniel's and whisk into the roux. Whisk in the almond milk. Keep on whisking until sauce thickens and begins to bubble... Do not boil!! Add the cheeses; stir until the cheeses melt and sauce is creamy. Add paprika, salt and pepper to taste. Pour the sauce over the pasta, and add bacon. Stir until pasta is completely coated in the sauce. Add more salt and pepper if you'd like. Enjoy!!!
