Ingredients
- 1 tablespoon butter
- 1/4 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup chopped carrots
- 1/4 cup sliced green bell pepper
- 6 cups low sodium beef broth
- 2 cup shredded cabbage
- Salt and pepper, to taste
- 1/4 tsp ground nutmeg

Preparation
Step 1
Melt the butter in a large saucepan with a tight-fitting lid over medium heat; add onions, celery, carrots and bell pepper; cook for 4 minutes, stirring frequently. Add broth; cover and simmer for 15 minutes. Add cabbage and seasonings; cover and simmer for 5 minutes.
