Mama's Bacon Dressing

Ingredients
- 12 ounces bacon
- 1/2 cup chopped onion
- 3/4 cup prepared yellow mustard
- 1/2 cup packed brown sugar
- 1 tablespoon minced garlic
- 2 cups vegetable oil
- 1/4 cup red wine vinegar
- 1 teaspoon dry mustard powder
- 1 teaspoon finely ground black pepper
- 1 teaspoon dried oregano leaves
- Salt to taste

Preparation
Step 1
In a large skillet over medium-high heat, render bacon until crispy. Place bacon on paper towel to absorb extra fat. Coarsely chop bacon and set aside.
Drain fat from skillet. Add onion to skillet and sauté until translucent; lower heat, and add prepared mustard, sugar and garlic. Simmer 2 to 3 minutes.
Transfer mixture from skillet to blender; add bacon pieces and purée until smooth. Place mixture in a large bowl and refrigerate until cool, about 20 minutes.
Measure oil and vinegar into a 4-cup glass measure. Whisk in dry mustard powder, pepper, oregano and salt. Slowly whisk oil mixture into bacon mixture until thoroughly combined.
Store in covered container in refrigerator up to 2 weeks.
