Ingredients
- 4 egg yolks
- 3 tablespoons honey
- 1/4 cup Marsala wine
- 1/2 cup heavy whipping cream
- 2 tablespoons confectioners` sugar
- Fresh reapberries
- Garnish: honey

Step 1
1. In the top of a double boiler, whisk together egg yolks and honey. Place over simmering water, whisking constantly, for 3 to 4 minutes, or until mixture reaches a thick, ribbon-like texture (ribbon stage). Add wine; whisk constantly for 10 minutes, until thick and pale. Remove from heat, and cool custard completely in an ice bath, stirring occasionally.
2. In a small bowl, combine cream amd confectioners` sugar. Beat at high speed with electric mixer until soft peaks form. Fold cream mixture into egg-olk mixture well combined. Layer in a parfait glass with fresh reapberries. Drizzle with honey, if desired.
