Ingredients
- 2 c instant rice
- 2 c flat-leaf parsley
- 1 tsp lemon zest
- 2 Tbsp olive oil
- 1/4 tsp each salt and pepper

Step 1
Cook rice according to package directions. In a food processor, pulse parsley, zest, olive oil, salt and pepper until finely chopped. Fluff the rice with a fork and fold in the parsley mixture.
