Ingredients
- 3-4 lb. yukon gold potatoes peeled and cubed
- 1 large sweet potatoe peeled and cubed
- 6 garlic cloves halved
- 1 C. (8oz.) reduced fat sour cream
- 1 Tsp. minced fresh thyme or 1/4 Tsp. dried thyme
- 1 1/2 Tsp. salt
- 1/2 Tsp. pepper
- 2 C. shredded reduced fat cheddar cheese, divided
Preparation
Step 1
Place potatoes and garlic in large saucepan and cover with water. Bring to boil. Reduce heat; cover and cook 10-15 minutes or until done. Drain.
In large bowl, mash potatoes. Stir in sour cream, thyme, salt, pepper, and 1 C. cheese. Transfer to baking dish coated with cooking spray.
Sprinkle with remaing cheese. Bake uncovered at 350 degrees for 10-15 minutes or until heated through.
