Ingredients

  • 3 big tomatoes (about 2 1/2 lb total)
  • 1/4 C evoo
  • 1 tbsp balsamic vinegar
  • 5 garlic cloves, sliced thinly
  • dried basil

Preparation

Step 1

1. Preheat the oven to 350.

2. Line a baking pan with tin foil. Make sure to use a pan with sides.

3. Drizzle some of the evoo on the foil.

4. Cut the tomatoes in half and place flesh side up on the pan.

5. Drizzle each tomato with balsamic vinegar, using up the 1 tbsp.

6. Top each tomato with a few slices of garlic.

7. Sprinkle with basil, to taste.

8. Pour remaining evoo over and around the tomatoes.

9. Cook at 350 for about 3 hours. Let cool for 15 minutes before serving.
