Ingredients
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped sweet red pepper
- 1 tablespoon olive oil
- 1 pre-baked pizza crust (such as Boboli)
- 1/2 cup prepared pesto
- 1 cup (4 oz.) crumbled feta cheese
- 1 cup (4 oz.) shredded part-skim mozzarella cheese
- 1 cup (4 oz.) shredded Parmesan cheese
- 1 can (2 1/4 oz.) chopped black olives
- 1 medium tomato, thinly sliced

Step 1
In a small skillet, saute onion and red pepper in oil until tender. Remove from the heat; set aside. Place crust on a pizza pan. Spread pesto to within 1/2 in. of edges. Layer with the cheeses, onion mixture, olives (I only use about half a can) and tomato. Bake at 400 degrees for 15-18 minutes, or to desired doneness.
