Ingredients
- 4-5 pounds mussels, cleaned well
- 1/4 cup e.v.o.o.
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup white wine
- 2 cans (16 oz.) diced tomatoes
- Salt and pepper to taste
- 2-3 tablespoons fresh parsley, chopped
- 1-2 tablespoons basil, chopped

Step 1
Heat the oil in a large sauté pan over medium heat. Add the onion and cook a minute or two, then add the garlic and cook a few more minutes. Add the wine and let reduce by half, then add the tomatoes and herbs. Cook for 2-3 minutes.
Add the mussels and cook for about 10 minutes or until all the mussels are open. Transfer to a platter and serve with garlic bread or pasta.
