Ingredients

  • Beef chuck roast, 4-6 lbs. ( 1 1/2 to 2 inches thick), well-trimmed.
  • Indirect/ Medium Heat 350-375
  • BOURBON STREET MARINADE
  • 1 1/2 cups water
  • 2/3 cup soy sauce
  • 1/2 cup apple cider
  • 3 tbsp. worcestershire sauce
  • 2 tbsp. lemon juice
  • 1/4 cup packed dark brown sugar

Preparation

Step 1

Prepare Bourbon Street Marinade; pour over beef chuck roast in shallow glass baking dish or large plastic bag. Refrigerate, covered, 8 hours or overnight. Remove beef from marinade; reserve marinade.

Place beef on cooking grate. Cook to desired degree of donenes. Grill 1 to 1 1/4 hours for medium rare 145, 1 1/4 to 1 3/4 hours for medium 160, or 1 3/4 to 2 hours for well-done 170. Brush beef with reserved marinade; turn beef halfway through cooking time. Remove beef to serving platter, let stand 10 to 15 minutes. Cut beef diagonally across grain into thin slices. Bring remaining marinade to a boil before serving with beef.

BOURBON STREET MARINADE:

Combine all ingredients. Makes about 3 cups.
