Ingredients
- 2 eggs
- 1 cup sugar
- 1/2 cup vegetable/canola oil
- 1 tsp coconut extract
- 1 cup sour cream
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 cup coconut flakes

- 3 Tbsp brown sugar
- 3 Tbsp coconut flakes
- 2 Tbsp butter, cold

Preparation
Step 1
using frozen blueberries to replace fresh blueberries in baked goods
Blueberries also seem to be on sale right now, so I think it’s a sign you should make these.
Preheat oven to 400 degrees Fahrenheit.
In a large bowl, beat eggs, sugar, oil, coconut extract, and sour cream.
In a separate bowl, combine the flour, salt, baking soda, and coconut flakes. Add the dry ingredients to the wet ingredients. Mix until incorporated.
