Ingredients

  • 12 oz. lean beef, small dice (12 protein)
  • 3 cups onion, roughly chopped (2 carbs)
  • 2 cups green beans, 2-inch pieces (2 carbs)
  • 2 cups celery, roughly chopped (1 carb)
  • 4 cups mushrooms, sliced (1 carb)
  • 12 ounces beer (flat beer is acceptable) (2 carbs)
  • 4 teaspoons olive oil (12 fat)
  • 3/4 cup beef stock
  • 1/4 teaspoon celery salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon dried rosemary
  • 2 teaspoons garlic
  • 1/4 teaspoon dried oregano
  • 1 1/2 tablespoons fresh parsley, chopped

Preparation

Step 1

Combine all ingredients in a medium saucepan. Bring to a boil, reduce heat and simmer, covered, 25 to 30 minutes. Place each serving in a large soup bowl and serve.
