Chicken Piccata (Quick)

This is a quick and easy version of Chicken Piccata. Love to serve it with long grain/wild rice and roasted asparagus.

Ingredients
- 1 t. seasoned salt
- 1/4 c. flour
- 1-1/2 pounds chicken breast cutlets
- 2 T. butter
- 1 T. capers
- 2 T. fresh lemon juice (and a few thin slices of the lemon
- 1/4 c. white wine (Chardonnay or Sauvignon Blanc are good choices)

Preparation
Step 1
Place flour and seasoned salt in a bag – shake to mix. Add chicken and shake to coat.
Preheat large pan on high 1-2 minutes. Place 2 T. butter in pan and swirl to coat. Using tongs, add chicken and sauté 8-10 minutes, turning halfway through cook time.
Combine capers, lemon juice and wine in a small mixing bowl and add to chicken. Cook 2-4 minutes, stirring occasionally to reduce liquid.
Garnish with thinly sliced lemon.
