  • Dressing:
  • 2.5 oz arugula
  • 1/3 cup chopped red onion
  • 5 oz dried cherries or cranberries
  • 1 -29 oz can mandarin oranges
  • 8.8oz box israeli pearl couscous-cooked according to directions, cooled and lightly salted
  • 1.5 lbs cook diced chicken seasoned with salt and pepper and lemon-optional
  • 1/4 cup white vinegar
  • 1/3 cup EVOO
  • 1/3 cup OJ or 3-4 freshly squeezed orange juice
  • a pinch of garlic powder, pinch of black pepper

Step 1

Combine all salad ingredients in a large bowl. Combine all dressing ingredients in a bowl . pour dressing over salad and refrigerate for up to 3 days. serve chilled.
