Ingredients

  • 2 3/4 cups all purpose flour
  • 1 3/4 cups sugar
  • 1 teas salt
  • 1 1/2 teas baking powder
  • 1/2 teas baking soda
  • 1 1/2 cups buttermilk
  • 1 egg
  • 1/2 teas pure vanilla extract
  • 5 tblsp unsalted butter, melted
  • 1 pint blueberries

Preparation

Step 1

1. Preheat the oven to 325.

2. Put the flour, sugar, salt, baking powdfer, and bkaing soda in a freestanding electric mixer with a paddle attachment and beat on slow speed.

3. Put the buttermilk, egg, and vanilla into a bowl and mix to combine. Slowly pour into the flour mixture and beat until just incorporated.

4. Pour in the melted butter and beat until the butter has just been incorpoarted, then turn the mixer up to medium speed and beat unitl the dough is even and smooth.

5. Finally, gently fold in the blueberries with a wooden spoon utnil evenly dispersed.

6. Spoon teh batter into the paper cases until two thirds full and bake in the preheated oven for 20-25 minutes or until golden and a skewer inserted in the center comes out clean. LEt the muffins cool slightly in the pan before turning out onto a wire rack to cool.
