Pineapple Lump Lolly Cake

By

A great twist on the classic lolly cake, a hit with adults and children. Creamy toasted coconut biscuit base mixed with pineapple and chocolate. If you serve it straight from the fridge the pineapple lumps are wonderfully crunchy. A great treat to get the kids involved in the kitchen.

Melt the butter in a bowl, then add the condensed milk and mix well.

Tip the butter mix over the crushed biscuits and mix until thoroughly combined.

Pour into the baking tray and push down firmly. A potato masher is great for this.

Melt the chocolate in the microwave and drizzle over the top of the slice. Place in the fridge until the cake has set.
