Ingredients

- 1 cup olive oil
- 1 tbs fresh lemon 2 c juice
- 1/4 tbs minced arlic
- 3 egg yolks
- 1 tbs dark mustard
- 1/2 tsp salt
- 1/2 tsp oregano
- 1 tsp basil
- 1/2 tsp thyme
- 1/2 tsp sugar

Step 1
Blend all the ingredients in a high-speed blender until creamy. Depending on how much of a garlic lover you are, you are, you may want to play with the amount of garlic you use to get it just right. For spicier sauce, add 1/8 teaspoon of cayenne pepper. Serve the fried calamari with the sauce either dribbled over them or on the side to dip the pieces
