Ingredients

  • 2 Tbsp olive oil
  • 10 medium sized mushrooms (1 1/2cups), chopped
  • 5 shallots, chopped
  • salt and pepper
  • 5 russet potatoes, cleaned and sliced 1/4 in thick or thinner
  • 16 oz (2cups) cheddar
  • 1 bunch of scallions (green and white parts), chopped

Preparation

Step 1

1. Preheat ove to 425. Lightly grease a baking dish.

2. Heat oil over medium-high heat in a large, heavy bottomed skillet

3. Saute the mushrooms, shallots and salt and pepper to taste for 3-5 mins, stirring frequently

4. Arrange half of the potatoes on the bottom of the baking dish. Cover the potatoes with half the mushroom mix. Cover the mushroom mix with half the cheese. Repeat the layering process, ending with cheese on top.

5. Cover with aluminum foil and bake for 30 mins. Remove the foil and bake an additional 20mins. This get the cheese nice and crispy on top.

6. Remove from oven and sprinkle with the scallions.
