Ingredients
- 1 1/2 pounds cooked shrimp peeled and deveined
- 2 tbsp butter
- 1 1/4 cups light cream
- 1/3 cup cocktail sauce
- 1/2 tsp salt and pepper
- 1 tsp worcestershire sauce
- 1 1/4 cups sharp cheddar shredded
- 3 cups cooked white rice
- 3 cups muchrooms sliced
Preparation
Step 1
Preheat oven to 350 degrees F.
Cook mushrooms in butter 4 to 5 minutes or until tender. Stir in rice, cheese, cream, cocktail sauce, worcestershire sauce, salt and pepper.
Cover and chill 6 shrimp. Halve the remaining shrimp lengthwise; stir into rice mixture. Spoon mixture into a 12x 7 baking dish or a 2 quart au gratin dish. Bake, covered for 30 minutes or till hot.
Garnish with reserved shrimp and fresh parsley.
