Ingredients

  • 1 stick butter, cut into 4 pieces
  • 6 cups (1 lb) sliced wild mushrooms
  • 1/3 cup finely chopped shallots
  • 2 tsp chopped fresh thyme
  • Salt and freshly ground black peppr
  • 2/3 cup dry sherry
  • 2 1/2 cups water
  • 1/4 cup chopped fresh chives

Preparation

Step 1

1. Heat a very large straight-sided saute pan until very hot. Add the butter and follow immediately with the mushrooms. Saute until the mushrooms are lightly browned. Add the shallots and thyme and saute until fragrant. Season generously with salt and pepper.
2. Add the sherry and the water and bring to a boil. Turn off the heat. Let the broth steep for approximately 2 minutes, taste, and adjust the seasoning. Add the chives and serve.
