Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup wheat germ
  • 2 teaspoons baking powder
  • 4 tablespoons brown sugar
  • 2 teaspoons cinnamon
  • 4 eggs lightly beaten (or egg substitute)
  • 1/2 cup vegetable oil
  • 1 1/2 cups milk
  • 1/4 cup chopped nuts (your choice)
  • 2 small bananas, diced

Preparation

Step 1

In a medium bowl, combine dry ingredients. In another medium bowl, whisk together eggs, oil and milk; pour into dry ingredients; blend well. Stir in nuts and bananas. Cook on a greased griddle. Pancakes can be frozen once they are nice and cool.
When you are ready to chow down, take out as many pancakes as you need and nuke them in the microwave until they are nice and warm. There’s no need to thaw before heating!
