Easter, 2009 - quick and easy to make and they all went (but for 6 I didn't put out) Would be good cold too. I added the leftovers to a chicken salad later in the week - yummy

Ingredients

  • OPTIONAL ADDITIONS :
  • Serves 10, 2 halves per serving
  • 12 whole Medjool dates
  • 60 grams goat cheese
  • 2 tsp. finely minced fresh rosemary or thyme
  • 3 slices prosciutto or serano ham, cut into 4 pieces each
  • add 1 whole roasted and salted almond to each before wrapping

Preparation

Step 1

Remove the pits from the dates.

In a small bowl mix the goat cheese with the rosemary, salt & pepper. Fill each date half with ¼ tsp of the goat cheese mixture.

Wrap 1 piece of prosciutto around each date and put in a covered dish in the fridge.

To serve at room temperature, remove from fridge about 1 hour before serving.

To serve warm, place dates in an oven proof dish and bake at 350 for 20 minutes just to warm. Serve.

Use extra fresh rosemary to garnish the plate if desired.
