Vegetable Cheese Casserold 0 Picture

Ingredients

  • 3 Cups Rice
  • 8 cups water
  • 1/2 head cauliflower cut
  • 1 head broccoli cut
  • 2 carrots sliced or 6 baby carrots cut 4 ways
  • 4 tablespoons butter
  • 3 slices American cheese
  • 8 oz shredded cheddar cheese
  • 8 oz shredded muenster cheese
  • salt and pepper to taste

Preparation

Step 1

Bring to boil 6 cups salted water
Add rice and cook for 5 minutes
Add vegetables cook for additional 3 minutes
Stir frequently and add one cup of water to mixture. When it looks like the water is almost gone add in butter and another cup of water. If mixture still seems a little dry add in one more cup of hot water and bring back to a simmer.
Tear american cheese into strips and add to mixture. Stir and take off heat.
Stir in half of the shredded cheddar and muenster cheese and add salt and pepper to taste. Put into baking dish and add remaining shredded cheese to top of casserole. Put on 350 degree oven for 15 minutes. Turn on broil and cook until cheese starts to brown.
