Ingredients

  • 1 1/2 cups rice vinegar
  • 1 1/2 teaspoons lime zest
  • 1/2 teaspoon hot sauce
  • 3 tablespoons sugar
  • 3/4 cup red onion, finely chopped
  • 3 large cucumbers, thinly sliced
  • 1/3 cup cilantro, chopped
  • 1 1/2 tablespoons peanuts, roughly chopped

Preparation

Step 1

Combine everything except peanuts into a large serving or non metallic mixing bowl. Cover and refrigerate at least 2 hours.
Sprinkle with peanuts just before serving.
