Spicy Tomato Vodka Sauce with Seared Scallops 0 Picture

Ingredients

  • Sauce:
  • 1 TB butter
  • 1 TB olive oil
  • 1 large shallot, chopped
  • 2 garlic cloves, minced
  • 1 TB dried italian seasoning
  • (1) 15 oz. can diced tomatoes
  • 1/4 cup vodka
  • 1/4 cup light cream
  • 1/2 cup grated parmesan
  • 1/2 tsp crushed red pepper
  • pasta of choice
  • Scallops:
  • Sea Scallops, washed very well and dried
  • 2 tsp oil
  • 1 TB butter
  • Salt & Pepper

Preparation

Step 1

Sauce:

Melt butter/oil in pan over medium-high heat. Add onion, garlic, italian seasoning; saute until translucent.

Add crushed red pepper, tomatoes and simmer for 10 minutes. Add vodka and simmer 5 more minutes. Add cream and parmesan. Simmer until thickens.

Scallops:

Heat oil and butter in skillet over high heat. Season scallops with salt & pepper.

When pan is smoking hot, add scallops. Turn the scallops once after a minute or so.

Serve sauce and scallops over pasta of choice
