Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 stalk celery, thinly sliced
- 4 ounces mushrooms, sliced
- 1 tsp dried oregano
- 6 ounces sweet Italian chicken sausage, casings removed (2 3-ounce links or 1 1/2 4-ounce ones), sliced
- 2 14.5-ounce cans diced tomatoes, undrained
- 2 tbsp tomato paste
- 1 16 ounce can cannellini beans
- Freshly ground black pepper

Preparation
Step 1
Coat a large nonstick skillet with cooking spray. Heat on medium heat. Add onion, garlic, celery, mushrooms, and oregano. Cook for 3-4 minutes. Add sausage slices and cook until browned. Drain excess fat. Add tomatoes, tomato paste, beans, and oregano. Simmer for 15 minutes. Serve with pasta of your choice.
