Codfish Cakes

- 2 cups salt codfish
- 2 cups mashed potatoes, hot
- 1 tablespoon butter
- 1/4 cup milk
- 1 teaspoon
- 1 egg
- 1/8 teaspoon freshly ground black pepper

Step 1
Soak the fish in water for several hours.
Drain anyplace in large saucepan. Cover with fresh cold water and put on stove set-to medium heat. Simmer until fish is tender.
Peel and chop the potatoes. Place in a medium saucepan filled 2/3 with water. Boil until the potatoes are tender. Put potatoes through a ricercari and set aside.
Drain fish and chop carefully, removing all bones.
Mix milk, butter, baking powder, potatoes and mix well. Add codfish and beat well.
Shape with floured hands into round, flat cakes.
Fry in a little butter until browned on both sides.
Before serving, bake in 350 degree oven for 10 minutes.
