  • Gorgonzala Sauce
  • 2 TBS butter
  • 2 TBS flour
  • 2 (or more) TBS sherry
  • 1/2 tsp white pepper
  • 1 TBS parsley
  • 1 tsp sage
  • 3/4 C gorgonzola
  • 1 TBS romano/parmesan

Step 1

Melt butter, stir in flour to make roux. Stir in sherry. Add
spices. Cook one minute. Add hot milk then cook 5 more minutes. Add
cheese, cook 5 minutes. Add mushrooms.
