Ingredients

  • 3/4 pound tomatoes, chopped
  • 1 (16-oz.) can whole kernel corn, drained
  • 1/3 cup chopped onion
  • 1/3 cup chopped cilantro
  • 2 tablespoons apple cider vinegar
  • 1 lime, juiced
  • 1 teaspoon taco seasoning mix
  • 3/4 pound lean ground beef
  • 4 flour tortillas

Step 1

DO-AHEAD TIP: Prepare salsa and chill for 4 hours before serving.

In a large bowl, combine tomatoes, corn, onion, cilantro and vinegar; cover and refrigerate for about 4 hours for salsa flavors to blend. In a large skillet over medium heat, brown ground beef until almost cooked through; add taco seasoning mix and lime juice; cook and stir until beef is cooked through. Lay tortillas on a work surface and spread equally with ground beef mixture; top with salsa, roll up and serve.

Serving Suggestions: Refried beans and Spanish rice.
