Ingredients

  • Dressing:
  • 2 cans pinto beans (drained and rinsed)
  • 2 cans black eyed peas (drained and rinsed)
  • 2 cans white shoepeg corn (drained and rinsed)
  • 1 jar pimento (drained)
  • 1 cup green pepper, finely chopped
  • 1 medium onion, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 1/2 cup canola oil
  • 3/4 cup cider vinegar
  • 1 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon water

Preparation

Step 1

• Place dressing ingredients in sauce pan and bring to boil. Remove from heat and cool.

• In large bowl, drain and combine the pinto beans, black eyes peas, white shoepeg corn, pimento, green peppers, onion, and jalapeno pepper. Add cooled dressing and stir. Chill.

• Serve with Frito Scoops or Tortilla scoops.
