Ingredients
- 1 tablespoon olive oil
- 1/2 white onion, diced
- 1 red pepper, diced
- 2 medium potatoes, diced
- 3 cups chicken broth
- 3 cups frozen corn
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/8 teaspoon black pepper
- 3 cups heavy cream
- 3 tablespoons shredded cheddar cheese for garnish, if desired

Preparation
Step 1
In a large soup pot, saute onions and red pepper in olive oil until slightly browned, about 5 minutes.
Add potatoes and chicken broth to mixture and bring to a boil.
Reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
Stir in corn, salt, thyme, pepper, and heavy cream.
Heat mixture thoroughly, but do not boil.
Top with shredded cheese, if desired.
