Chicken Pomodoro

Ingredients
- 4 chicken cutlets
- 2 Tsp vegetable oil
- 1/4 C vodka
- 1/2 C low-sodium chicken borth
- 2 Tbsp fresh lemon juice
- 1/2 C tomatoes, chopped
- 2 Tbsp heavy cream
- garnich with 1/3 C scallions, minced

Preparation
Step 1
Season culets with salt and pepper then dust with flour.
Saute cutlets in oil. Transfer to a platter; pour off fat from pan.
Deglaze pan with vodka (away from flame) and cook until vodka is nearly gone.
Add broth and lemon juice. Return cutlest to pan & cook each side 1 min. Transfer cutlets to warm plate.
Finish the sauce with tomatoes & cream. Heat through then pour over cutlets
Garnish with scallions
