Ingredients
- Vinaigrette:
- 2 TBS rice wine vinegar
- 1 TBS soy sauce
- 1 tap toasted sesame oil
- 1 tap honey
- Minced zest and juice of one small lemon
- Black pepper to taste
- Salad:
- 3 heads baby bok CHOY, trimmed and thinly sliced (about 3 cups)
- 1/2 cup shredded carrot
- 1/4 cup slivered red onion
- 1/4 cup fresh cilantro leaves
- 1/4 cup toasted, salted cashews, chopped

1. Vinaigrette - whisk together all ingredients and season w/ S&P
2. Toss together salad ingredients; drizzle with vinaigrette and garnish with cashews
