  • Vinaigrette:
  • 2 TBS rice wine vinegar
  • 1 TBS soy sauce
  • 1 tap toasted sesame oil
  • 1 tap honey
  • Minced zest and juice of one small lemon
  • Black pepper to taste
  • Salad:
  • 3 heads baby bok CHOY, trimmed and thinly sliced (about 3 cups)
  • 1/2 cup shredded carrot
  • 1/4 cup slivered red onion
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup toasted, salted cashews, chopped

1. Vinaigrette - whisk together all ingredients and season w/ S&P
2. Toss together salad ingredients; drizzle with vinaigrette and garnish with cashews
