Creamy Corn and Spinach

Ingredients
- 2 Tbsp olive oil
- 2 cloves garlic, chopped
- 1 jalapeno, chopped
- 16 oz pkg frozen corn, thawed
- 2 scallions, thinly sliced
- 1/2 c sour cream
- 3 c spinach, roughly chopped
- 1/2 tsp salt
- 1/2 tsp pepper

Preparation
Step 1
Heat oil, garlic and jalapeno in a large skillet over medium heat for 2 minutes. Add corn and scallions and cook until heated through, about 3 minutes. Stir in sour cream and cook for 1 minute. Add spinach, season with salt and pepper and cook, stirring occasionally, until just wilted, about 2 minutes.
Swap corn for black beans or tomatoes.
