Ingredients

  • Beef Stock
  • Water
  • Bones from a large prime rib or other beef bones
  • 4 onions medium dice
  • Beef Stock Mix (if its insufficiently beefy)
  • Meatballs
  • 2 lbs ground beef
  • 1 onion fine dice
  • handful parmesan cheese
  • handful granulated garlic
  • bread crumbs milled from old gluten free cheese biscuits
  • Soup Ingredients
  • Olive Oil
  • 2 Onions
  • 2 lbs baby bella mushrooms quartered

Preparation

Step 1

Beef Stock
1. Saute onions in bottom of stock pot.
2. Add bones, breaking / cutting them if possible.
3. Add water.
3. Bring to boil.
4. Transfer to slow cooker.
5. Cook on low for 8 + hours.
6. Cool.
7. Skim fat.
8. Strain.

Meatballs
1. In kitchen aid bowl add meat, parmesan, onion, garlic and bread crumbs.
2. On low mix together well (roughly a full minute).
3. Form into small meatballs; makes a whole tray.
4. Bake at 375 for 35 minutes.

Soup
1. Bring stock to boil.
2. Saute onions in olive oil until golden.
3. Remove from pan. Add mushrooms and cook 5 to 7 minutes until done.
4. When boiling add onions and mushrooms.
5. Cook 5 minutes and then put in bowls. Top with three meatballs and serve.
