Ingredients

  • 4 cups of onions, celery and carrots
  • Minced garlic
  • 4 Tbsp oil
  • 4 lbs dried split peas
  • Ham bone and meat
  • Salt and pepper to taste

Preparation

Step 1

In a large pot sautee onion, carrots, celery and garlic in oil
Add the peas and ham bone and add enough water to cover
Season with salt and pepper
Cook covered until there are no peas left. Approx. 2 hours
Check to see the liquid hasn't evaporated. You may need to add more water
Once the soup is green add the remainder of the ham and remove from heat and let stand to thicken.
