Ingredients

  • 2 cups of prepared Quinoa
  • 1/4 cup diced red onion or green onions
  • 1/2 cup diced celery
  • 1/2 cup diced cucumber
  • 1/2-3/4 cup diced tomotoes or cherry tomotoes cut in half
  • 1/4 cup parsley or cilantro chopped
  • 1 can of black beans drained and rinsed.
  • 1 package of crumbled feta cheese
  • Margretta or Italian Dressing to taste

Preparation

Step 1

Combine all ingredients and toss to mix together. Chill and Serve.
All ingredients can be adjusted to individual taste. This is a high protein salad.
