Charlotte's Sweet Potato Cake

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 teas. baking powder
  • 1 teas. baking soda
  • 1/4 teas. salt
  • 2 teas. ground cinnamom
  • 1 cup vegatable oil
  • 1- 151/4 oz crushed pineapple, undrained
  • 2 teas. vanilla
  • 3 eggs
  • 2 cups grated raw sweet potatoes
  • 1 cup chopped pecans
  • 1- 10 inch tube pan, greased and floured

Preparation

Step 1

Combine: flour , sugar, baking powder, baking soda, salt and ground cinnamon.

Add and MIx: veg. oil, pineapple, vanilla

Stir in: eggs one at a time, beat after each egg

Add: sweet potatoes and pecans

Pour into greased and floured pan and bake on 350 degrees for 1 hour and 15 minutes
