Coconutty Cinnamon Banana Bread~Gluten-free 1 Picture

Ingredients

  • 8 eggs
  • 2 mashed ripe bananas
  • 2 teaspoons vanilla
  • 5 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup melted coconut oil
  • 5 tablespoons maple syrup or honey
  • 1/2 cup shredded coconut
  • 3/4 cup coconut flour
  • Note: It’s a very dense bread. However, if you want you can add 1/2 teaspoon or so of baking soda/powder.

Preparation

Step 1

Preheat oven to 350 degrees F.

Mix all ingredients together until well combined. Pour into 6 mini loaf pans or 12 muffin tins (or 24-36 mini muffins).

Bake for 25-35 minutes (muffins take less time than mini loaves) or until it tests done.
