Ingredients
- 3 boneless skinless chicken breasts
- 1/4 c. soy sauce
- 1/4 c. cooking oil
- 2 tsp cornstarch
- 1/2 tst garlic powder
- 1/2 tsp sugar
- 1/4 tsp salt
- 1/4 tsp ground red pepper
- 2 c. fresh broccoli
- 1 c. sliced celery
- 1 onion
- 2 Tbsp dry sherry
- 1/4 c. water

Cut chicken into bite-size pieces. Combine 2 tablespoons of soy sauce, 1 tablespoon oil, 1 teaspoon cornstarch, the garlic powder, sugar, salt and red pepper, blending well. Add chicken and turn to coat. Cover and marinate in refridgerator for 20 minutes. Place remaining oil in large skillet and heat to medium high temperature. Add broccoli, celery, and onion. Stir-fry for 6 minutes or until crisp tender. Remove vegetables and set aside. In same skillet, stir fry chicken for 5 minutes or until opaque and fork can be inserted in chicken with ease. Return vegetables to pan. In a small bowl, mix remaining soy sauce and cornstarch with sherry and water. Pour over chicken. Reduce heat and simmer, uncovered for 3 minutes. Serve over hot cooked rice. Serves 4, but easy to cut in half.
