Ingredients

1 cup Lemon Curd
One 1-liter bottle sparkling water, chilled
8 scoops vanilla ice cream (about 1 1/2 pints)

Step 1

Spoon 1/4 cup lemon curd into each of 4 pint glasses; add 1/4 cup sparkling water to each and stir to combine. Add 2 scoops ice cream to each glass and fill with more sparkling water. Serve immediately with straws.
