Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 ounces mushrooms, sliced
  • 2 clove garlic, minced
  • 1 carrot, shredded
  • 1 stalk celery, chopped
  • 1 pound boneless pork loin, cut into bite-size pieces
  • 1 1-pound can crushed tomatoes
  • 1/3 cup dry red wine or beef broth
  • 2 Tablespoons dried rosemary, crushed
  • 1/4 tsp. each dry basil and oregano leaves

Preparation

Step 1

1. Sprinkle pork with salt and pepper.
2. Heat oil in a large nonstick skillet and brown pork sides.
3. Remove pork and set aside.
4. To the pan add onion, garlic, celery and carrot. Cook stirring until onions are soft, about 5 minutes.
5. Stir in pork and remaining ingredients, stir well, cover and simmer 10-15 minutes.
