Ingredients
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 4 ounces mushrooms, sliced
- 2 clove garlic, minced
- 1 carrot, shredded
- 1 stalk celery, chopped
- 1 pound boneless pork loin, cut into bite-size pieces
- 1 1-pound can crushed tomatoes
- 1/3 cup dry red wine or beef broth
- 2 Tablespoons dried rosemary, crushed
- 1/4 tsp. each dry basil and oregano leaves

Preparation
Step 1
1. Sprinkle pork with salt and pepper.
2. Heat oil in a large nonstick skillet and brown pork sides.
3. Remove pork and set aside.
4. To the pan add onion, garlic, celery and carrot. Cook stirring until onions are soft, about 5 minutes.
5. Stir in pork and remaining ingredients, stir well, cover and simmer 10-15 minutes.
