Ingredients

  • 1 zucchini
  • 1 onion
  • 1 celery
  • carrots
  • 1 broccoli
  • 1 red pepper
  • 1/2 cauliflower
  • 1-2 potatoes
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 c stock
  • 1 c milk
  • a little tyme
  • a little oregano
  • 1 bay leaf
  • Bacon (optional)
  • Frozen corn (optional)

Preparation

Step 1

1. Crisp up some bacon - after this is done use the drippings to saute the onions, carrots and celery.
2. After the onion mixture has cooked a little add the other veggies. Once all the veggies are slightly cooked take them out of he pot for a few minutes.
3. Use the butter and flour to make the roux. Make sure you cook out the flour before adding the stock and the milk. - After you have added the milk and stock add back the veggies.
4. Add in some chopped thyme and oregano and bay leaf. At this point if you would like to add some frozen corn you can. Add the potatoes.
5. Cook til potatoes are tender - salt and pepper to taste.
6. Serve hot with a bit of cheese and the bacon on top.
