Roasted Pork and Apple Casserole 0 Picture

Ingredients

  • 4 boneless pork chops
  • 1 onion, sliced
  • 2 cups sliced mushrooms
  • 2 tablespoons balsamic vinaigrette
  • 1 1/2 cups instant brown rice
  • 1 (14.5-oz.) can low sodium chicken broth
  • 1/2 cup water
  • 2 Granny Smith apples, cored and sliced
  • 1 teaspoon thyme
  • Salt and pepper, to taste

Preparation

Step 1

Preheat oven to 400 degrees. Lightly grease a casserole dish. Place pork chops in casserole dish. In a large mixing bowl, combine remaining ingredients; pour over chops. Cover dish with aluminum foil wrap and bake for about 25 minutes. Uncover and bake for 10 minutes or until chops are cooked through, rice is tender and top is golden brown. (Add water as needed to keep rice from becoming too dry.)

SERVING SUGGESTION: Steamed broccoli spears and steamed baby carrots.
