Ingredients
- 3 egg yolks, room temp
- 1 1/2 TBL lemon juice
- 3/4 C (3/8LB) butter or marg
- 1 TBL hot water
- 1/2 tsp salt
- dash of cayenne
- 1 tsp prepared mustard

Preparation
Step 1
combine egg yolks & lemon juice in
blender
melt butter & heat until bubbles
fon't brown
add 1 TBL hot water to egg yolks & lemon
juice
turn blender on high speed
immediately pour in hot butter in steady
strea - this takes abt 5 seconds
add salt, cayenne & mustard
whirl until well blended - abt 30 sec
