Beer-Onion Braised Chicken Carbonnade

Ingredients
- 2 TBL (1/4 stick) unsalted butter
- 4 lg. chicken thighs w/ skin & bones
- 3/8 tsp grd allspice
- 1 LB onions, thickly sliced
- 3 tsp (packed) dark brown sugar,divided
- 4 sm. bay leaves
- 2 tsp dijon mustard
- 1 C dark beer
- 1/2 C beef broth
- 1-2 tsp red wine vinegar

Preparation
Step 1
melt butter in lg. nonstick skillet over
med high heat
sprinkle chicken w/ S & P & allspice
add chicken to skillet & saute until
brown, abt 4 min per side
transfer to plate
add onions & 2 tsp brown sugar to skillet
sprinkle w/ S & P
cover & saute until deep golden brown,
stirring occasionally, abt 10 min
mix in bay leaves, mustard & remaining 1
tsp sugar
add chicken, skin side down, then beer,
broth & 1 tsp vinegar
bring to boil
reduce heat to med
simmer covered 10 min
uncover skillet & simmer until chicken
is cooked through & sauce thickens,
turning chicken occasionally - abt
20 min
season w/ salt & pepper & more vinegar,
if desired
