Ingredients
- 1 pkg. (12 oz.) breakfast link sausage
- 6 English muffins, cut into cubes
- 1/4 cup melted butter
- 1 cup (4 oz.) shredded cheddar cheese
- 1 cup (4 oz.) shredded mozzarella cheese
- 1/2 cup chopped onion
- 1/2 cup chopped red pepper
- 12 eggs
- 2 cups milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 cup bacon bits

Step 1
Cook sausage according to directions on package. Cool slightly, cut into 1/4" slices. Place English muffin cubes in a greased 9" x 13" cake pan. Drizzle with butter. Layer with sausage, cheese, onion and red pepper.
In a large bowl, combine eggs, milk, salt and pepper. Pour over cheese mixture. Sprinkle with bacon. Cover and refrigerate over night.
Remove from refrigerator 30 minutes before baking.
Uncover and bake at 350 degrees for 45 - 50 minutes or until knife inserted into the center comes out clean.
Let stand for 5 minutes before serving.
