Ingredients

  • 1 Recipe Berger Cookies (approx. 18 cookies)
  • 1 unbaked pie crust
  • 1/2 c. butter, softened
  • 1/2 c. sugar
  • 3 eggs
  • 1 tbsp. cornmeal (or almond flour, or flour)
  • 1 tbsp. vinegar
  • 1 tsp. vanilla

Preparation

Step 1

Chop up Berger cookies, and fill the pie crust with the pieces (you may have a few extra to nibble on).

Whisk together the remaining ingredients.

Pour the wet mixture over the cookies. Using a rubber spatula, gently stir to coat all cookie pieces. I like to kind of smush everything down a little bit.

Bake at 350 for 35-40 minutes until golden brown on top.

Serve warm with ice cream!

For the Cookie:
1 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup buttermilk
1/2 teaspoon vanilla
1/3 cup butter, softened
1/2 cup sugar
1 egg
For the Frosting:
2 c. semi-sweet chocolate chips
1/2 c. heavy whipping cream

For the Cookie:
Whisk together all of the ingredients in a stand mixer.
Spoon onto a parchment lined baking sheet.

Bake at 350 for 13-15 minutes until golden brown on the edges.
Let cool completely before frosting.

Makes about 1 1/2 dozen cookies.

For the Frosting:
Combine the heavy whipping cream and the chocolate chips in a microwave safe bowl. Microwave for 1 minute. Stir until smooth. Spread on top of cookies.

Let cool for a few hours or overnight for best results (seriously!)
