Ingredients

  • Butter or baking spray for preparing pan
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 8 tablespoons (1 stick) unsalted butter, chilled and cut into bits
  • 1 teaspoon grated orange zest
  • 3/4 cup fresh orange juice
  • 1 large egg
  • 1 cup coarsely chopped dried cranberries
  • 1/2 cup coarsely chopped pistachios or walnuts

Preparation

Step 1

Preheat the oven to 350 degrees.

In a food processor, blend the flour, sugar, baking powder, salt, baking soda, and butter until the mixture resembles coarse meal.  Transfer the mixture to a large bowl.

In a small bowl, whisk together the orange zest, orange juice, and egg.  Add to the flour mixture, and stir the batter until it is just combined.  Stir in the cranberries and nuts.

I just tried your pesto and it is wonderful and believe me I have put it on almost everything. It make a plain chicken sandwich something your taste buds will remember!
