Thai Turkey Meatballs 1 Picture

Ingredients

  • 2 zucchini, grated
  • 1 pound ground turkey
  • 1/4 cup green onion, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 and 1/2 cup coconut milk
  • 3 tablespoons tomato paste
  • 1 teaspoon curry powder
  • 1 teaspoon sriracha
  • 1/2 teaspoon red pepper flake

Preparation

Step 1

Combine zucchini, ground turkey, green onion, garlic and egg in a large mixing bowl.
Shape into 1 and ½ inch meatballs.
In a skillet over medium heat, cook meatballs for 3-4 minutes on each side.
Meanwhile, stir together coconut milk, tomato paste, curry powder, sriracha, and red pepper flake.
Pour sauce into skillet. Reduce to low heat and simmer for 15 minutes.
Top with additional green onions.
